Pita Pizzas

Today I had my favorite clean-up-wilting-vegetables-and-pitas meal for lunch! That’s right, a Pita Pizza! Super delish and crazy easy to make! I like to put whatever I can find on the top of a pita, whether it’s olives, pineapple, beans, or even zucchini! Today’s pizza was completely necessary to use up all the leftover veggies from camping this weekend (not to mention pita!)

My pita today consisted of:

1 whole wheat pita (I haven’t been able to find any gluten free one, maybe they don’t exist?)

1 tbsp salsa

1 slice of lactose free cheese

4-6 slices of zucchini

1/2 cup peppers

1/4 cup red onion

1/4 cup black olives, pitted

1 large leaf of basil, shredded

Directions:

Spread salsa over pita. Layer toppings, ending with cheese. Bake at 350 degrees for 10-12 mins until pita is crispy.

[so good and crispy]

[yum, can't you just smell all the toppings?]

Unfortunately for me, I forgot to add some spinach. It’s usually a staple for my pita pizzas, but I forgot it today! AND it probably won’t make it through the week because its getting icky. I will just have to have a few Green Monsters to use it up :D
