Today started off with a bang… my oatmeal exploded in the microwave!
I was so shocked when I opened my microwave and saw so much of my delicious breakfast outside of the bowl. I had to put in extra toppings today to make up for it.
- 1/2 cup oatmeal
- 2/3 water
- 1 banana
- 1/2-3/4 cup blueberries
- 1 1/2 tbsp Almond Butter (Nuts to You brand)
- 1 tbsp Fruit Spread or jam (I use Crofter’s brand)
- 1/2 cup sliced almonds
- splash almond milk
Combine oats and water. I use the microwave method because I’m usually short on time. I microwave for 2 mins, stir, add mashed banana, and then let sit for 3 mins. Afterwards I mix in the almond butter and fruit spread. Then I add blueberries and splash of almond milk. On top, I sprinkle the sliced almonds.
Really delicious and satisfying! Keeps me full for hours
After that oatmeal, I was sure the day couldn’t get any better. But boy did it ever! Today, since the weather was so cold this morning (seriously?! 5 degrees???) I had to break down and wear shoes. I love sandals so I wear them all the time in nice weather, but today I decided to wear a pair of ballet flats. Big mistake. The ones I wore are super uncomfortable but I was running late so I didn’t have time to change them before school. I was hoping they’d be okay. Wow was I wrong.
I parked about a 25 mins walk from school and that was enough to kill my feet. They didn’t hurt much at first, but by the time my class was over (and they had enough time to swell and blister) I was in extreme pain and could hardly walk. But lucky for me, my super sweet husband went and got the car after my class and picked me up so I didn’t have to walk!
Anyways so I knew I was going to need some new shoes ASAP! I’ve has my eyes on Toms for awhile, so I went and picked up a pair. They are quite fabulous! I had to try on a few size 9s (not all are created equally) but I found a pair that felt so good!
I’m super excited to wear them tomorrow!
