This morning I woke up medium hungry which means that I had time to make something awesome in the kitchen without worrying about the hunger monster taking over. I went to my go-to site for meal ideas: Oh She Glows.
This was my criteria for breakfast:
- Use up some of the fruit which was going bad in my fridge
- Have all the ingredients (or appropriate subs) on hand so I wouldn’t have to go to the grocery store
- Be light enough so that I wouldn’t suffer a stomach ache all day
In a matter of minutes I found something that looked perfect: A breakfast crisp!! I checked over the recipe, and with a few changes, it would match my criteria perfectly! AND the recipe says that it makes enough to serve 6: hello less work tomorrow!
Strawberry Apple Breakfast Crisp

The breakfast took some time to prepare and cook, but I think it was totally worth it. It is super delicious! I’m serious, it doesn’t taste ‘special diet’ at all. The berries I used were very ripe (see above), so the crisp was definitely sweet enough! Next time I make it, I’ll likely make it at night and just heat it up in the morning to save some time. But this crisp would work excellent for a dessert as well, maybe served with some yummy coconut ice cream.
And did I mention that it’s vegan and gluten free?? And could easily be adapted for nut free as well!
Ingredients:
Filling:
- 3 large apples, peeled, cored, and sliced
- 6 strawberries, sliced
- handful of blackberries (optional)
- 1/4 cup sugar (I used golden cane)
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tbsp lemon juice
- 1 tbsp + 1 tsp arrowroot starch (the original recipe says cornstarch would work as well)
- 1 tsp vanilla extract
Topping
- 1/4 cup walnuts, chopped
- 1/4 cup coconut, shredded
- 1/2 cup oats (I used steel cut for a grittier texture)
- 1/4 cup sugar (I used golden cane)
- 1 tbsp maple syrup
- 2 tbsp extra virgin olive oil
- Pinch salt
- 1/2 tsp vanilla extract
Directions:
1. Preheat oven to 400F and grease a casserole dish (I used a 2L). In a large bowl, combine filling ingredients. Mix well and set aside.
2. In a medium bowl, combine topping. Mix well.
3. Pour the filling evenly into the casserole dish. On top, evenly distribute topping.
4. Cover (I used a casserole lid but Angela suggests foil poked with holes if lid is unavailable) and bake for about 40 minutes at 400F. If you do not cover it, the topping will burn. Allow to cool for at least 10 minutes before serving.
I topped mine with a spoonful of greek yogurt, but I think a splash of almond milk would also taste great!

Meanwhile, I have to get back to work! I’m taking Weasley to the vet tomorrow, so I won’t be able to get as much work done!
